Takes a detailed look at a centralized, integrated, food service which provides 50,000 meals each day to students, staff, and visitors at a large university campus. Examines the food services building, which stores canned goods, frozen fruits, vegetables, and meats, and houses the staff and equipment for testing, buying, processing, and distributing 28 tons of food daily. Visits a separate coordinated facility on campus which provides fresh breads, pastries, and cake products. Includes information about scientific control of the storage environment, computer regulation of inventory, diet planning, and food quality control.
